Preparation: Stove: Soak the peas for 2 hours in warm water, rinse with plenty of water for 5 min. Pour in 1 part peas in 2 parts boiling water and cook for 60 minutes with a lid on low heat. Leave to rest for 15 minutes with the lid on. Oven with Steam: Soak the peas for 60 min in hot water with a lid, rinse with plenty of water for 5 min. Pour 1 part peas with 2 parts cold water into the canteen. Cook for 120 min in a convection oven with steam, 98 °C. Leave to rest for 15 min.
